A couple of weeks ago I met Louisa Bakker from Keto Cacao, and she shared her inspiring story with me. This power lady is on a mission to shake up the chocolate market! How? Together with an award-winning chocolatier, she created the first Keto-friendly chocolate bar in The Netherlands, and from last February they have been sharing their Keto bars & keto love with others. It’s a bar without the unnecessary sugars,  fillers, and preservatives, but with extra healthy fats!

 

 

 

What I personally love about Keto Cacao, is that these bars are made with pure ingredients that give you a lot of energy. Namely: cacao powder, MCT oil, and erythritol that does not raise insulin or blood sugar levels. The feeling of being able to eat a chocolate bar with lots of healthy fats, while at the same time consuming only 1 grams of net carbs, is heavenly! Especially MCT oil is perfect to provide quick energy, and this is exactly what I need as a runner before my long runs! The bars come in 3 different flavours: dark chocolate, hazelnut, and coconut of which hazelnut is definitely my favourite.

So what is Louisa’s story, and how has her Keto Cacao journey been so far? I had a chat with her, and got to find out!

 

Hi Louisa! Could you tell me a bit more about your background, and how you came into contact with the keto way of eating?

For as long as I can remember, I have been passionate about health, sports, and nutrition. Growing up my partners owned a health store in Amsterdam and they were the distributor of different mineral waters from around the world. In our family, talking about health and nutrition is something we do constantly (which can sometimes annoy friends or new lovers in our family).

After I graduated in 2017, I went traveling in South-America and visited many cacao farms. I was intrigued by the beauty of cacao and its health benefits. I have always loved eating dark chocolate but never knew about the tremendous cacao varieties. During this trip, I spent a lot of time reading articles from Dr. Mercola and as I was eating low-carb for a long time, eating Keto-based seemed so eyeopening. Before eating this way, I was already consuming mostly sugar-free but still lots of carbs from fruits and starchy vegetables. I never understood why I was constantly having cravings, feeling bloated, experiencing sugar crashes and unstable energy. Looking back, I was afraid of eating too much fat, as they are calorie-dense and back then I believed this would make me gain weight.

For over a year now I have been eating Keto-based. I focus on consuming wholesome foods high in healthy fats, moderate protein and food low in carbs, sugar.

 

Which products do you eat a lot to make sure your diet is well-formulated?

I never run out of MCT oil/powder at home for my smoothies or morning coffees, also avocado’s, pecan nuts, macadamias, coconut oil/avocado oil, fatty fish, leafy greens and eggs. It’s so easy to make a quick breakfast or lunch with these main ingredients and it keeps me satisfied and energized for a long time. Besides that, since starting my own chocolate brand I of course regularly have a Keto Cacao bar. It’s exactly the snack I need after my workout or a long day at the office. For dinner, I always make something quick, normally a salad bowl with lots of olive oil or my favourite vegetable Brussel sprouts and I add some bacon or fish with it.

 

Can you share your Keto Cacao journey from the moment you got the awesome idea up till now?

During my trip to South-America, I knew I wanted to work with good quality cacao and create a product out of it. First I did a lot of research on what’s out there, in terms of low-carb chocolate and I found many bars using additives like soy lecithin and artificial flavours. This could be either to make the bars more attractive or have a smoother texture. I was fed up with eating products with ingredients I can’t even pronounce or have never heard of before. To maintain the nutritional benefits of cacao it shouldn’t be mixed with a high amount of dairy products and different types of sugars. Bear in mind that sugar is included in many other sweeteners, such as honey, maple syrup, agave syrup, (sucrose, glucose, and fructose).
As a result, I teamed up with an award-winning chocolatier here in Europe and after a lot of testing, we’ve launched the first trials of Keto Cacao in February this year. Since then we received a lot of feedback so we took this into account and worked again on finetuning the flavour. Since just a month ago we’ve launched our improved flavour. We are happy with the positive feedback we’re currently getting. It’s still an on-going journey and perhaps one of the benefits of being still small is that we’re flexible.
Now our new Keto Cacao chocolate bars are made with 100% single origin Tumaco cacao together with the natural sweetener Erythritol and MCT oil powder (100% derived from coconuts).

 

Working hard on creating a product that really fits the needs of your customers, I admire that! So if you have to describe Keto Cacao in 3 words, what would they be?

Honest, Fatty, Nutritious.
 

What makes the bars from Keto Cacao different from other keto bars?

We make chocolate bars with healthy fats and high-quality ingredients, to help you feel and perform at your best. No sugar, no soy, no fillers, no crap. We don’t use sweeteners that will spike insulin, we focus on the quality and benefits of cacao by choosing only a few ingredients and we add extra MCT’s for more energy and satiation. It’s all about getting long-lasting energy from fat instead of a quick fix from sugar.

 

So after you launched the new flavour, what was the coolest reaction you got from a customer after trying it?

Over the summer, as we’ve been working a lot on improving the product it’s absolutely great to receive now such positive feedback. One I will never forget is from one of our loyal customers who has followed us from the start: ” I love the improvements that were made over the summer. It’s a really rich taste with little to no Erythritol and MCT aftertaste. I really love that a new flavour was added (hazelnut) and I’m really hopeful for the future that more flavours will be introduced! I love the simple packaging and the size is perfect”.

 

Wow, that is awesome. Which other awesome things are you planning for the future, where do you see Keto Cacao in 5 years?

Developed into a platform with more products focused on good nutrition from healthy fats and informative content to guide and support people in their low carb, high-fat journey.
